RESTAURANT SUPERVISOR - FARMHOUSE DELI

PURPOSE OF THE POSITION
Supervises the serving of guests in the Hotel’s restaurants and at functions.
QUALIFICATIONS & EXPERIENCE
  • Grade 12
  • Minimum of 2 years supervisory role in a hotel \ restaurant environment.
  • Previous experience in a 4* or 5* establishment.
  • Micros / Opera.
  • Wine course.
KEY ACCOUNTABILITIES
  • Day to day Operation
  • Demonstrate exceptional level of professionalism, maturity and emotional intelligence at all times
  • Ensures that Waiters/Waitresses have fully stocked the service side station/s at the commencement of service and that they are replenished and kept clean and orderly throughout service.
  • Ensures that Waiters/Waitresses know the menu items and daily specialities and seasonal foods in order to be able to describe and sell to the guests.
  • Ensures that uniform standards are adhered to by Waiters/Waitresses being clean and well groomed. Leads by example in this regard.
  • Ensures that Waiters/Waitresses take guest meal and drinks orders in a helpful and organised manner.
  • Ensures that Waiters/Waitresses set tables in accordance with established standards ensuring that silverware, china and linen are clean, polished and in good condition.
  • Ensures that Waiters/Waitresses serve food and beverages in the established service style.
  • Assists with taking orders, serving food and drinks, seating guests etc.
  • Ensures that restaurant layout and table allocations are correct prior to service
  • Ensures that Waiters/Waitresses satisfy guest complaints and requests or, if unable to do so, ensures that problems are promptly reported to the F&B Outlet Manager/F&B Manager.
  • Ensures that operational SOP’s are adhered to and implemented at all times.
  • Assists with all waiter cash ups
  • Keeps record of all voids\vouchers etc.
  • Is accountable for the standard of cleanliness and hygiene in the restaurant.
  • Exhibits a professional appearance and attitude in a manner which will enhance the guests’ experience and satisfaction.
  • Ensures that Waiters/Waitresses check that guest bills are correctly compiled and presented to the guest in the established manner.
  • Attend meetings and training sessions as directed.
  • Performs additional duties as instructed.
  • Be available to work in any food and beverage outlet within the Hotel as directed by the F&B Outlet or Restaurant Manager, Food and Beverage Manager
  • Be familiar with the Hotel fire and safety procedures and how to operate the fire fighting equipment.
  • Assist in maintaining the budgeted food and beverage COS
  • Partake in all stock takes for both beverage and OE
  • Administration and Systems Management
  • Fully competent on Micros
  • Ensure all checklists are up to date
  • Training schedules followed as per training planner
  • General:
  • Fully familiarised with all hotel and company policies, as well as hotel programmes offered such as Loyalty programmes, audit and service measurement programmes and merit awards.
  • Participate in company and hotel induction-and refresher programmes.
  • Demonstrate exceptional level of professionalism, maturity and emotional intelligence at all times
  • Attends regular meetings with other management members as defined by the Food and Beverage Duty Manager to facilitate the smooth running of the department and the rest of the Hotel
  • Ensure the security of confidential documents and trade secrets.
  • Attend to any reasonable request made by Senior Management
  • Report and where possible handle cases of accident, fire, theft, loss, damage or contravention of regulations.
  • Relief and assist in all areas during periods of absence or crisis.
  • Maintain Company standards and ensure that policies and procedures are adhered to.
